Okay, better late than never, right? I missed last week's Menu Plan Monday even though I had a menu for last week--a menu that we actually followed! So I was determined today to get my menu posted, even though I've had a few sickly kids & a thousand things to do. Here's what we'll be eating this week. (Since breakfasts & lunches are so repetitive, I'll spare you.)
Monday: Potatoes Kielbasa Skillet--a friend's mom made this for me while I was on bedrest and was kind enough to share the recipe...
1 pound red potatoes, cubed 2 TB cider vinegar
3 TB water 1 TB dijon mustard
1 TB olive oil 1/2 tsp dried thyme
1/2 C chopped onion 1/4 tsp pepper
5 bacon strips, cooked and crumbled 4 C fresh baby spinach
1 lb. smoked kielbasa, cut in 1/4 in slices
2 TB brown sugar
Place potatoes and water in a microwave-safe dish. Cover and microwave on high for four minutes until tender. Drain.
In a large skillet, saute sausage and onion with olive oil in skillet until onion is tender. Add potatoes. Saute 3-5 minutes longer or until sausage and potatoes are lightly browned.
Combine the brown sugar, vinegar, mustard, thyme and pepper in a separate bowl. Stir into skillet. Bring to a boil. Reduce heat. Simmer, uncovered, for 2-3 minutes or until heated through.
Add spinach and bacon. Cook and stir until spinach is wilted.
Tuesday: Red Beans & Rice
Wednesday: Tacos, Fruit Sorbet
Tacos with lean ground turkey & homemade taco seasoning. This is really close to the recipe I use. And for the sorbet, I toss frozen fruit into the blender and add enough orange juice to keep it moving, blend it until it's slush & serve in individual sundae cups.
Thursday: Chicken Roll-ups, broccoli slaw, maybe butterbeans?
Boil 4 chicken breats & shred. Roll chicken in crescent rolls & place in buttered casserole dish. Combine 1 can cream of mushroom soup with 1/2 can chicken broth. Pour over chicken. Bake at 350* for 40-45 minutes. Check the last 15 minutes and cover with foil if too brown. Shredded cheese may be added to chicken.
Friday: Deep Dish Pizza
Saturday: Lentil Tacos
Sunday: Chili
