YUM! YUM! YUM! and HEALTHY TOO!
In my neverending quest for SIMPLE and HEALTHY recipes, I stumbled upon this one over at Taste of Home. (Click that link for the recipe.) I added a little chicken left over from the night before and doubled the dressing ingredients, and this recipe was a satisfying & filling meal. It will definitely be added to the summer menu rotation. Total prep/cook time was less than half an hour, and the best part--less than 200 calories!! (Not that I count them, but hey that sounds good, right?!)
